Watermelon Granita (slushy)
- 6 cups peeled, seeded, cubed watermelon
- 1/4-1/2 cup sugar
- 2½ Tbsp. lemon juice
Process watermelon in a blender or food processor until smooth (approximately 4 cups puree). Pour into a bowl, add sugar and lemon juice, stirring until sugar dissolves. Cover and chill. Pour watermelon mixture into a 9×13-inch pan and freeze, stirring occasionally until firm (approximately 3 hours). Scoop frozen mixture into balls using ice cream scoop. Serve in paper snow cone cups or dessert dishes.
