- 1/2 cup blanched sweet corn
- 4 ripe plum tomatoes, peeled, seeded and diced
- 1/2 cup minced onion
- 1 tsp. minced jalapeno pepper
- 2 Tbsp. chopped fresh cilantro
- 1 Tbsp. lime juice
- Salt and pepper, to taste
Combine all ingredients and serve. Great served with sausage and potato cakes or as a dip.
