Serves 4

  • 1/2 cup blanched sweet corn
  • 4 ripe plum tomatoes, peeled, seeded and diced
  • 1/2 cup minced onion
  • 1 tsp. minced jalapeno pepper
  • 2 Tbsp. chopped fresh cilantro
  • 1 Tbsp. lime juice
  • Salt and pepper, to taste

Combine all ingredients and serve. Great served with sausage and potato cakes or as a dip.
