
Grilled Vegetables
Serves 4
- 1 onion
- 1 red pepper
- 1 yellow pepper
- 1 green pepper
- 1 zucchini
- 1 pkg. mushrooms
- 1 clove garlic, diced
- 2 Tbsp. olive oil
- Salt and pepper, to taste
Cut up all vegetables and place in a skillet or aluminum pan, if grilling. Pour oil over vegetables, add salt and pepper; cook or grill until vegetables are tender.
