Makes 3 loaves, 30 slices

  • 3 cups flour
  • 3 cups sugar
  • 1/2 cup cocoa
  • 1½ tsp. baking powder
  • 1½ tsp. baking soda
  • 1 tsp. salt
  • 1/4 tsp. cinnamon
  • 4 eggs
  • 1½ cups vegetable oil
  • 2 Tbsp. butter
  • 1½ tsp. vanilla extract
  • 1½ tsp. almond extract
  • 3 cups grated zucchini
  • 1 cup chopped pecans
  • 1/2 cup raisins
  • Combine dry ingredients in one bowl. Combine wet ingredients in another bowl. Fold dry ingredients into wet ingredients. Add pecans and raisins. Grease bottom and sides of 3 loaf pans. Bake at 350°F for 60 minutes or until toothpick inserted comes out clean. Cool 10 minutes. Flip out of pan. Serve when cool.
