Makes about 12 servings

An unusual, but refreshing combination of garden-fresh produce and walnuts.

  • 4 cups chopped watermelon pieces
  • 2 cup chopped tomato
  • 2 cups chopped cucumber
  • 1/4 cup walnuts, toasted
  • 1/4 cup crumbled feta cheese
  • 1 tablespoon olive oil
  • 1/4 teaspoon freshly ground black pepper

Place watermelon, tomato, cucumber, walnuts, and feta in a bowl. Toss with olive oil and pepper. Serve chilled.
