
Maple-roasted Apples and Onions
Makes 4 servings

- 6 medium apples, cored and cut into wedges
- 2 large onions, cut into wedges
- 2 tablespoons balsamic vinegar
- 2 tablespoons pure maple syrup
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Preheat the oven to 400°F. Spray a rimmed baking sheet with non-stick cooking spray. Place ¬¬ and onions in a bowl and mix with the vinegar, maple syrup, olive oil, thyme, salt, and pepper. Bake until golden brown about 25 minutes.
