
Apple Butter
Serves 8
- 6 lbs. cooking apples, peeled, cored and coarsely chopped
- 1 cup water
- 4 cups sugar
- 1/2 cup white vinegar
- 2 tsp. ground cinnamon
- 1/2 tsp. ground allspice
- 1/2 tsp. ground cloves
Combine apples and water in a large Dutch oven and bring to a boil. Cover, reduce heat and simmer 20 to 25 minutes or until apples are tender. Mash apples; stir in sugar and vinegar and bring to a boil. Reduce heat and simmer, uncovered, 2½ hours or until mixture is very thick. Stir in cinnamon, allspice and cloves. Store in refrigerator up to one month.
